Ingredient Notes:
- Beef Roast – I used a 3 lb beef chuck roast. I will admit that this isn’t the cheapest meal, as a 3 lb beef chuck roast cost around $16, but you can easily stretch the meat to make at least 8 servings.
- Au jus Gravy – I used a packet of McCormick Au Jus Gravy Mix Seasoning to season the roast AND for the au jus I served with the sandwiches. You can use the liquid that your roast cooks in as your au jus, but you will need to separate the fat from it. If you don’t have a fat separator or don’t want to spend time doing this, I’d suggest buying an extra packet of McCormick Au Jus Gravy Mix and mixing up a fresh batch to serve alongside the sandwiches. (That’s what I do because sometimes cutting a corner is worth it!)
- Buns – I serve this instant pot french dip sandwich with hoagie buns, but you can use any buns you’d like. If you only have circular buns, I’d suggest cutting them in half so they are easier to dip.
- Cheese – I use provolone cheese, but you can use any cheese you’d like. Pepperjack, cheddar, and swiss all make great sandwiches. You can use sliced or grated cheese, whatever you prefer.

Tips for serving Pressure Cooker French Dip Sandwiches:
- Buns – you can serve the sandwich with the bun straight out of the package or butter the bun and lightly toast it.
- Beef Roast – after the beef roast is done cooking, I gently pull it apart into reasonably size pieces. I don’t truly shred it, just try to make it easier for everyone to eat.
- Au Jus – I serve it in a small bowl on the same plate as the sandwich.
- Sides – I like serving these French dip sandwiches with a side of air fryer Arby’s curly fries. It also pairs well with a vegetable, like green beans or broccoli.
Pressure Cooker French Dip
Your family is going to love this pressure cooker French dip recipe! It's quick, easy to make, and is delicious! You only need a beef chuck roast, au jus seasoning, cheese, and buns!
Ingredients
- 3 lb beef chuck roast
- 1 oz packet Au Jus seasoning
- 1 cup of water
- 8 hoagie buns
- Au Jus (Additional Packet or liqud from roast)
- 8 slices of provolone cheese
Instructions
1. Pat beef roast with paper towels to remove excess moisture. Rub au jus seasoning evenly on both sides of roast.
2. Place beef roast into your pressure cooker. Add 1 cup of water.
3. Attach your pressure cooker lid and be sure you move the venting knob to the sealed position. Cook at high pressure for 60 minutes and allow a natural release (~15 minutes).
4. Remove roast and place on a cutting board. Use two forks to gently shred the meat.
5. If using liquid from beef roast for au jus, use a fat separator to remove fat before serving. Butter and toast buns if desired.
6. Add meat to hoagie buns and top with provolone cheese. If desired, warm the sandwich in the microwave to melt cheese or place under broiler in oven for a few minutes (careful - you don't want to burn the bun!) Garnish with dice parsley if desired.
Notes
Crockpot Instructions:
1. Pat beef roast with paper towels to remove excess moisture. Rub au jus seasoning evenly on both sides of roast.
2. Place beef roast into your crockpot. Add 1 cup of water.
3. Turn on your slow cooker to low and cook for 8 hours. (Times will vary based on your crockpot).
4. Follow steps from above.
Freezer Meal Instructions:
After cooking the beef roast (in either pressure cooker or crockpot), gently shred beef using two forks. Allow the roast to cool. Portion as desired into quart-sized resealable freezer bags. Gently flatten the contents of bag and remove as much air as possible. Freeze for up to 3 months.
When ready to use, thaw in fridge or simply remove from bag and heat in microwave until hot. Then follow step 6 from above to make French dip sandwiches.
