Looking for a chicken crockpot recipe? This easy crockpot Hawaiian chicken recipe can be prepared in a resealable bag and then stored in the freezer. This pineapple chicken can then be served over rice and side of veggies (I love to serve it with raw peppers!)

Ingredient Notes:

  • Pineapple – I used canned pineapple chunks in 100% juice, but you could use fresh pineapple if you prefer with pineapple juice (or water).
  • Chicken – I used chicken breasts in this recipe, but you could also use chicken tenders.
  • BBQ sauce – You can use your favorite sauce, but I’d suggest one that’s on the sweeter side. I used Sweet Baby Ray’s Honey Barbeque sauce.

Tips for serving Crockpot Hawaiian Chicken:

  • I like to shred the chicken on a plate when it’s done cooking. Then when it comes to serving, I serve the chicken, the sauce, and the pineapple in separate bowls, so everyone can choose how they want to prepare it. I find some people like more sauce and pineapple and so keeping it separate makes it easier (especially if you have picky eaters).
  • I serve this over long-grain white rice, but you could also use Minute Rice. I’d suggest serving it with a side of veggies, like steamed broccoli or raw bell peppers.
  • If you make this as a freezer meal, be sure you thaw it before you put it in the slow cooker. Here’s why.

This easy crockpot Hawaiian chicken recipe is made with chicken breasts, pineapple chunks, soy sauce, sesame oil, bbq sauce, and brown sugar. It's delicious served over white rice with a side of veggies. Your family is going to love this easy crockpot chicken recipe and it's a great addition to your freezer.

Ingredients

  • 1/2 cup honey barbeque sauce
  • 1/3 cup soy sauce
  • 1 Tbsp rice vinegar
  • 1 Tbsp sesame oil
  • 1/4 cup brown sugar
  • 2 lbs boneless, skinless chicken breasts
  • 20-oz can pineapple chunks in juice

Instructions

1. To your Crockpot, add honey bbq, soy sauce, rice vinegar, sesame oil, and brown sugar. Mix.

2. Add 20 oz can of pineapple chunks (including juice). Mix well.

3. Add chicken breasts.

4. Turn Crockpot to low and cook for 8 hours.

5. When chicken is cooked, shred chicken using two forks. Serve over white rice and add sauce. Garnish with sesame seeds if desired.

Notes

Instructions for Freezing Crockpot Hawaiian Chicken:


1. To a gallon-sized resealable freezer bag add honey bbq sauce, rice vinegar, sesame oil, and brown sugar. Mix.

2. Add 20 oz can of pineapple chunks (including juice). Mix well.

3. Add chicken breasts.

4. Place freezer bag in the freezer on a baking sheet (so it freezes flat). When frozen, store as desired.

5. To cook, thaw in fridge and then add to crockpot. Cook on low for 8 hours.

6. When chicken is cooked, shred chicken using two forks. Serve over white rice and add sauce. Garnish with sesame seeds if desired.
