These chocolate covered energy balls are so delicious, you’re entire family is going to LOVE them. The recipe is incredibly versatile, you can probably make them with the current contents of your pantry. Don’t have any chocolate in your kitchen? No problem skip the chocolate coating. Have sweetened (or unsweetened) coconut in your cupboard? Either is fine. Prefer dried cherries instead of a chocolate coating? Just add them to the mix before shaping them into balls.
I’ve been making these energy balls on a regular basis for over a year. They are a great treat for kids because if you have a picky eater in your house (like I do), who won’t eat peanut butter or oatmeal, these treats might just be so sneakily delicious that they won’t know it’s in them!

I also like making these energy balls because when we are really trying to be careful about what we eat, I can use unsweetened peanut butter and unsweetened coconut flakes without anyone even noticing (seriously!) Use up the ingredients you have on hand and then replace them with unsweetened versions – I bet no one will know!

If you hate the mess created by dipping these in chocolate, you can add chocolate chips to the mixture instead of coating the them. The neat part about dipping them in chocolate is that the chocolate isn’t as crunchy and it makes the coating of these energy balls similar to the coating on a Reese’s peanut butter cup – oh so good!

Chocolate Covered Energy Balls
These easy chocolate covered energy balls are a great no bake treat that the entire family will enjoy.
Ingredients
- 2 cups old fashioned oatmeal
- 1 cup of peanut butter
- 1 cup of coconut (shredded or flakes)
- 2/3 cup of honey
- 10.oz Ghiradelli Dark Chocolate Melting Wafers (or 10 oz of chocolate chips)
Instructions
- To a medium sized mixing bowl add oatmeal, peanut butter, coconut and honey. Stir thoroughly using a spatula.
- Using a medium sized cookie scoop, form mixture into balls (slightly smaller than golf ball sized).
- In a microwave safe bowl, melt chocolate wafers in microwave for 25 seconds. Stir. Heat in microwave for another 20 seconds. Stir well. If chocolate is not uniformly melted, keep heating in microwave for 10 second increments followed by stirring.
- Using a broken plastic fork (found the technique here), dip each energy ball into the melted chocolate and roll until coated. Place on a piece of aluminum foil to cool.
- Store chocolate covered energy balls in a sealed container in the fridge.
- Enjoy (and get ready to make more!)
Notes
This recipe is so versatile, seriously just use up things you have on hand! Only have quick cooking oatmeal - use it! Don't have chocolate, then don't add the coating.
I like to add dried cherries to these treats. Simply add 1 cup of dried cherries to the oatmeal, peanut butter, honey, and coconut mixture.
